As The Girl Evolves, So Does The Mission
Eat. Stay. Wheel started as a pretty simple idea: showcase accessible adventure in the state that I love. As a wheelchair user, I am always searching for information that doesn’t always exist. Can I get inside that new restaurant profiled on the local news?
And if I can get in… can I pee there?
What’s my experience as a wheelchair user going to be like?
The original mission was straightforward: showcase accessible micro-adventures, the good food, cool stays, and everyday places that wheelchair users could actually experience.
Eat here.
Stay here.
Roll here.
Eat. Stay. Wheel.
And although that original goal remains still a strong thread in the fabric, as the girl evolves so does the mission.
As I begin writing about our weekend adventures last summer— spotlighting new trails, trying new activities, and enjoying my long-standing love affair with a good cup of coffee, I started to notice something deeper developing behind the moments.
I wasn’t just trying to highlight the accessibility of our wanderings, I was being changed by them. I started responding to the way they made me feel. I began to notice more of the little things I had once been too busy to make time for. As time passed, I felt inspired to create more.
And above all, I wanted to share these moments of joy with others.
The little adventures.
The coffee stops.
The sunsets.
The reminder that a life well lived doesn’t have to be big or dramatic to matter, but it does have to be claimed.
Through the process of building this dream — without a full plan — I have come to realize something important:
Accessibility was never the whole story.
It was the doorway.
What I was really documenting wasn’t just ramps and curb cuts. It was the small magic of everyday life, the kind of life that anyone can miss if they’re moving too fast.
And… if I’m being honest, the girl behind Eat. Stay. Wheel. was evolving too.
At first, this project felt like a guidebook.
Now it feels more like a personal philosophy, perhaps even one we need right now.
A reminder that adventure doesn’t always look the same, just like that of the disability experience, it’s different for everyone.
Sometimes adventure looks like improving your own PR while rolling a 5K. (a past adventure I will always cherish)
But sometimes adventure is just deciding to leave the house, chase good coffee, and see what happens.
Eat. Stay. Wheel. is still about accessible adventure.
But it’s also about something bigger.
It’s about creating a space where joy sits at the center. Where curiosity matters more than perfection. A space where joy becomes a quiet form of resilience, resistance. A place where we remember that disability doesn’t cancel out the human desire for a full and interesting life.
Because the truth is, most of us want the same things.
A good meal.
A comfortable place to land.
A chance to explore the world around us.
Some of us just happen to roll there.
Perhaps, that’s the real meaning behind the name after all.
Because truthfully, joy was never meant to be exclusive.
It was always meant to be shared.
